This dessert is so easy to make, you can throw it together in about 5 minutes and then in the oven it goes where it makes itself for you.

Ingredients

  • 4 Eggs
  • 120g melted butter or margarine
  • ½ Cup plain flour
  • ½ Cup sugar
  • 1 Cup shredded or desiccated coconut
  • 2 Cups full-cream milk
  • 2 Teaspoons of Vanilla Essence

Preheat the oven to 170°C Mix everything together in a large mixing bowl and pour into a baking dish. It will rise somewhat, so make sure it’s not full to the brim. Bake for 45 minutes to an hour. Check it after ¾ of an hour to see if it’s browning up nicely on top. Poke it in the middle with a skewer and if it comes out clean, then it’s cooked. Leave it to cool slightly, if you can, and eat. I don’t know how it does it, but from a runny liquid in the baking dish, it makes it’s own pastry at the bottom, the middle turns into a delicious vanilla custard and the coconut rises up to the top where it gets all crispy and toasted. One of the easiest desserts to make and the results are outstanding. From a pie-dish full of liquid that you put in the oven, out comes a custard pie with a pastry base and a crispy toasted coconut top. Inconceivable!
